Jar of pickled Amla, Raw Mango and green chillies

Anything you can do to bring back good memories, you must do smile emoticon . I still remember those days when I was in the 6th grade, studying in my native place, Mahe, I used to wait for the summers to come by (unlike now wink emoticon ). You will find all the roadside carts with a big jar of pickled Amla, Raw Mango and green chillies. This was often our snack during those 15 min breaks we had between 2 periods of study. It used to be such a joy to run as soon as the bell rung, to reach the cart so that you could be the first one to get them! . Since I go home very frequently, I really don’t miss them. But then , as I said, why don’t I just savor them whenever I want to bring back those good memories smile emoticon

It is very simple to pickle them. All you need to do is to boil 2 liters of water with 2 tablespoon of salt (adjust it as per your taste). As it boils add the amla wait for 30 seconds and you can take it out go the heat and let it cool. in the mean time cut some mangoes, slit a few green chillies, 1 inch ginger cut in to strips and a few garlic cloves. I also added a few Radishes. Arrange them in a jar, add the alma after it has cooled and then pout the liquid into the jar up to the brim, close it tightly and it is ready to eat in 4-5 days.
