Roasted Brussels Sprouts with Fried Shallots, Bacon and Pomegranate glaze

A riot of textures and a heart-warming satisfaction, that’s what I call this recipe. Well, when you see the first ingredient, ‘Brussels Sprout’ and you go, “Oh my god!” . Yes, “Oh my god!”, that’s the expression I would like to see from all who would try this recipe and wonder why you did not have Brussels Sprouts before!

So here we go, a simple recipe that you can snack on and makes quite a perfect complement with a glass of crisp white wine.

Roasted Brussels Sprouts with Fried Shallots, Bacon and Pomegranate glaze

20 Brussels Sprouts
200 grams bacon fried to crisp and fat drained
2 tablespoon fried shallots
I tablespoon Pomegranate glaze
1 tablespoon extra virgin olive oil

Method

Clean the Brussels sprouts and cut into half. Drizzle olive oil to coat a thin layer and season well with salt and pepper. Roast it in a pre heated oven at 220 degree centigrade for 25-30 mins or until the Brussels sprouts starts to caramelize and cooked through. Crumble the bacon, mix it with fried shallots. Drizzle 1 tablespoon of bacon fat into the roasted sprouts and add half the mixture of shallots and bacon. While serving, sprinkle the rest of the half of the bacon and shallot mixture and drizzle the pomegranate glaze on top.
