Chicken Kebab with Chilli Hummus

Chillies when used right can accentuate flavors to a different level. If it takes two to Tango, then this kebab and the chilli hummus combination will are in perfect harmony  . The recipe was inspired from my last trip to Dubai while flipping through the Wafi Gourmet Menu. Though it has always been on my mind as to how one can experiment with Hummus, now probably is a good time . This is my take on chicken kebab with hummus

Chicken Kebab with Chilli Hummus

500 grams chicken breast cut in to cubes
5 tablespoon yogurt
2 tablespoon extra virgin olive oil
1 teaspoon garlic paste
½ teaspoon cumin powder
½ teaspoon black pepper freshly ground

Marinate the chicken with all the above ingredients, add salt to taste, for at least 2 hours.
Chilli Hummus

2 cups of boiled chickpeas
2 tablespoon tahini
3 cloves garlic
3 green chillies de-seeded
3 tablespoon yogurt
Juice of 1 big lime
1 tablespoon fresh coriander chopped

Grind all the ingredients above to a smooth paste and adjust salt and lime juice. Add the chopped coriander and let it rest for 5 mins.

Method:

Grill the chicken on a skewer and arrange it on the hummus bed as shown in the pic. Drizzle some olive oil and it is ready to serve.
