French mussels

These french mussels just need 1 min steaming to get cooked !. You can make some spaghetti, pour over the sauce and the mussels and enjoy ..

500 grams mussels washed
150 ml chardonay
200ml cream (use a lighter one)
2 cloves of garlic chopped fine
2 tablespoon finely chopped chives
1 tablespoon parsley
Lemon rind, few pieces
2 tablespoon extra-virgin olive oil
Salt and black pepper to taste

Choose a medium pan with lid, and over low heat add olive oil and sweat the garlic. add the white wine and increase the heat to high and let it reduce to 1/3 and add the lemon rind and the cream. Bring it to boil and simmer it till it reduces to 1/2 and then add the mussels. Increase the heat and as it starts to boil cover it with lid for one minute and give it a thorough shake. Take the lid add the chives and the parsley mixx well and put back the lid and remove it from the heat and let it stay for 3-4 mins. Now its ready to serve smile emoticon
