Steamed Paneer with Spinach, Feta filling and caramelized Orange.

I am on a constant look out for inspirations and ideas to try something different with Paneer (Cottage Cheese) to take it to the next level. The crisp Nitida Savignon Blanc inspired me to try this recipe and wanted to keep Paneer at its core, as it is easily available across India.

Steamed Paneer with Spinach, Feta filling and caramelized Orange.

For steaming

Paneer (Cottage Cheese) cut in to ¼ inch thickness (2 pieces of 2inch by 1inch)
½ teaspoon black sesame seeds roasted slightly
1 tablespoon chilli infused extra virgin olive oil
Salt to taste
For the filling

½ bunch of spinach (only leaves) 
1 tablespoon extra virgin olive oil
1 clove garlic crushed
½ teaspoon freshly ground pepper
1 small pinch of nutmeg
2 tablespoon crumbled Feta Cheese

In a sauce pan over medium heat add olive oil and crushed garlic and when the garlic is soft add the spinach and sauté for 30 seconds on high flame. Season with pepper, nutmeg and salt to taste and take it out of the heat and let it cool.

Chop the blanched spinach coarsely and mix in the Feta and the filling is ready
For caramelizing

1 firm orange, peel cut off and cut in to slices
2 tablespoon sugar
½ tablespoon water

Mix the sugar and water and in a thick bottomed sauce pan over medium heat, sauté till the mixture caramelizes. Please take good care else it gets burnt. Once you see its turning light brown, add the orange slices 30 seconds each side and then remove it and let it cool.

For steaming and plating

Layer spinach leaves in a steamer, place the first slice of Paneer and make a sandwich filling with the filling made as shown in the pic. Carefully place the other slice on the top of the filling place 2-3 slices of orange on top and steam it for 6-7 minutes.

Layer the caramelized oranges as a base, carefully take out and place the steamed Paneer on the base. Remove the oranges from the top and drizzle chilli infused olive oil and sprinkle the roasted sesame seeds.
