
It is interesting that many people don’t really have a palette for Figs. But this was a hit and I managed to convert 6 of them!!!
Poached Figs with Cream and Pomegranate Glaze
12 Figs cut in to half
500 ml red wine (use a fruity one)
2 inch cinnamon
2 cloves
2 tablespoon sugar
I pod of vanilla scrapped
100 ml of whip cream
50 ml of cream
Pomegranate glaze for dressing
In a wide thick-bottomed pan, add the wine and sugar over medium heat and reduce it to half. Add cinnamon, cloves and vanilla and simmer it for 5 minutes. Place the figs cut side down in to the pan and poach them for 10 minutes. Remove the figs in a serving plate and let it cool. Sieve the remaining wine and bring it back to medium heat and then reduce it until it is just a cup full. Take it off the heat and let it cool. Sprinkle the reduced wine over the figs and refrigerate it for 2 hours. While serving, whip the whip cream to soft peak, add the regular cream to the whipped cream and then scoop it over the fig and drizzle the pomegranate glaze.
