Sardine Pepper Fry
10 Sardines
1 teaspoon haldi powder
4 table spoon lime juice
1 and half table spoon coarsely grounded black pepper
3 tablespoon cooking oil
4 green chillies
1 sprig of curry leaves
Clean the sardines, discard the head wash and pat dry. Mix haldi, lime juice, pepper and salt to taste and marinate the sardines in the mixture for 30 mins in a plate. In a thick bottomed pan, over high heat add the oil and once the oil is hot add sardines. Before frying sprinkle pepper powder so that the sardines have a fresh sprinkle of the it and when it fries, you get the bite of pepper. Fry them for a min and then turn the heat to medium heat and fry them for 3-4 min, and once one side is done repeat the sprinkling of the pepper on the side which is up before turning it over. Bruise the green chillies and add them and also the curry leaves and repeat the frying process, exactly as the first side and its done.
