Chicken Pepper Fry

This recipe is adapted from 3 different sources; my Mom, Sis and the Toddy shop in Mahe. Its easy and its delicious and for me many good memories was coming by, when the aromas was filling up my kitchen..

Chicken Pepper Fry

1 kg of chicken cut in to medium pieces, washed and droned
4 table spoon of shallots chopped in length (small onions)
1 in ch ginger crushed and chopped
8 garlic crushed
4-5 green chillies slit
3 table spoon of oil
1 tablespoon of coarsely ground black pepper
1/2 in piece of cinnamon
3 cloves
1 table spoon curry leaves
1 teaspoon haldi powder
1 teaspoon chilli powder
Salt to taste

For garnish and final fry

4 table spoon of shallots chopped in length (Small onions)
1 table spoon of curry leaves
2 table spoon of coconut oil

In a deep pot (you can use a non stick), add chicken to salt and mix it well with the hand. Turn the heat to high and cook it for 5 mins until the chicken is sealed. Turn down the heat to simmer and cook the chicken until its 90% done. Turn the heat up and let the water evaporates and at the same time add coconut oil in a small pan and cook the shallots under garnish till its slightly brown. Add the shallots in to the pot which is on high flame add pepper powder, curry leaves and fry it until the water fully evaporates and the pepper is coated evenly. Voila!!!
