Grilled Aubergine on Greek Yogurt

If the recipe is complicated, then never try, coz the person never wants you to get it right. If the technique is hard, one can always learn. The simpler you want to make the recipe, the more you appreciate each ingredient and look for ways to enhance it. As they say simplicity leads to sophistication and thats the beauty of creating a recipe, and only such will touch someones heart… smile emoticon

Grilled Aubergine on Greek Yogurt

1 medium size Aubergine sliced in to 1/3 inch thickness
500ml Plain yogurt (Hung for 20-30 minutes)
3 cloves of garlic crushed with a garlic crusher

For the drizzle
2 tables spoon butter
1/2 teaspoon paprika
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon finely chopped sage

Take the hung yogurt and whisk in the garlic and salt to taste. Grill the Aubergine on high flame until its crispy on the outside and soft (pl make sure its still firm and not soggy). Layer the yogurt on a plate, and layer the Aubergine on the yogurt.

Heat a pan and melt he butter over low heat, when the butter melts add in the paprika, sage and black pepper and turn off the heat. Drizzle over the Aubergine and voila!!! Have it with pita bread, white bread or paav.
