
Just before I tried, thought would click it. Almond-Basil sauce, didn’t want to call it #Pesto. #Christmas Series
Mozzarella & Cherry tomatoes in Almond-Basil Sauce
2 tablespoon of almonds
5 tablespoon of extra-virgin olive oil
1 flake of garlic
1 tablespoon parmesan
1/2 cup of Basil leaves
3/4 tablespoon of italian white wine vinegar
A dash of lemon juice
Freshly ground pepper to garnish
Salt to taste
Blend the almonds, parmesan and garlic for 10 secs. Then add white wine vinegar and basil and blend for 5 seconds so that the leaves are still choppy. Cut Mozzarella in to cubes and the cherry tomatoes in to quarters. Mix it with the sauce and sprinkle freshly ground pepper and have it over
